What's Cooking October 23rd

The weather in Ohio is finally starting to break, it went from 75 and sunny to 50 and rainy. I had fun picking some comfort foods to combat the dreary weather for this week. As much as I love the freshness of summer foods and being able to grill, by the time fall rolls around, I'm ready to enjoy heartier meals again. I’m also testing using my instant pot for a couple recipes. Monday’s kitchen day is a great example of what I call the nap time hustle. It was a quick and to the point while baby slept. I got everything done in about 1 hour. Here’s what’s going down in my kitchen this week.

Monday- Leftovers
Tuesday- Steak topped with Onions and Mushrooms and Instant Pot Baked Potatoes.
Wednesday- Leftovers
Thursday- Instant Pot Loaded Potato Soup
Friday- Chicken and Dumplings with Green Beans
Saturday- Out
Sunday- Ham Steak, Tasty Rice, and Vegetable.

Weekly Breakfast- Freezer/Fridge/Pantry Clean out
-Baked Oatmeal
-Peanut Butter Toast
-Yogurt with Granola

Lunch-Southwest Chicken Roll-ups

Kitchen Day Prep

  • Brown bacon (for soup topper).
  • Roast chicken (for chicken and dumplings).
  • Bake southwest chicken.
  • Build roll-ups.
  • Cut up pineapple.
  • Clean out refrigerator.

It occurred to me that I haven’t mentioned one of the easiest and handiest hacks of kitchen day, a garbage bowl!

I can not take the credit, Rachael Ray has been preaching it for years. Get a big bowl and keep it on the counter next to where you are working. Instead of walking back and forth to the garbage can to toss things, just put them in the bowl. It may seem silly or that you don’t spend that much time throwing stuff out, but it is so convenient and really does save you time.
