What's Cooking November 13th





I have been working a lot more than usual lately. So this week, I put together a very simple, easy to execute meal plan for us. I’m also using up some stuff I have in the freezer (curry chicken and cornbread). Can I let you in on a secret? Yesterday, I opted to take a nap instead of doing kitchen day. Self care folks, self care.


Here’s what's going down in my kitchen.


Monday- Leftovers
Tuesday- Chicken and Rice with Green Beans (Rollover)
Wednesday- Curry Chicken Noodle Soup
Thursday- Ham, Cornbread Dressing, and Peas.
Friday- Tacos with Slaw
Saturday- Out
Sunday- Sausage, Pepper, and Onion Pasta Sauce over Spaghetti


Breakfast All Week- Oatmeal with various toppings/mix ins and fruit.
          {Peanut butter, bananas, apple, nuts, and cinnamon}


Lunch- "Snacky Lunch”.
{Cheese, crackers, salami, grapes, apple, nuts, and pickles}


What I am loving this week.


I went grocery shopping hungry and picked this up on a whim.



It was incredible!! The crust was crisp, goat cheese flavorful, the sauce had a hint of sweetness, and the tomatoes tasted like fresh, summertime, backyard garden tomatoes. It actually looked like the picture on the box (which never happens!) and was tasty enough that I would happily cut it into small pieces to serve as an appetizer to guests. So if you have an aldi nearby, keep an eye out for these.
